Cooking Ingredients:
• 1 Bangus Fillets (Milkfish), cleaned and gutted
• 2 Tomatoes, sliced
• 1 Red Onion, sliced
• 3 cloves Garlic, minced
• 2 tbsp Coconut Oil
• 2 tbsp Calamansi juice
• Salt and pepper to taste
• 1 tsp Dried Oregano
• 1 tsp Dried Thyme
• 1 tbsp Chopped Fresh Parsley (optional, for garnish)
Cooking Instructions:
1. Prepare the Oven and Fish
• Preheat your oven to 375°F (190°C). If using a whole bangus, score the fish lightly on both sides to help it cook evenly.
2. Prepare the Baking Dish
• Lightly grease a baking dish with a bit of coconut oil. Place the whole bangus or fillets in the dish.
3. Season the Fish
• Drizzle the fish coconut oil, then sprinkle with salt, pepper, and dried oregano (if using). Squeeze the calamansi juice over the fish to add a tangy flavor.
4. Add the Vegetables
• Scatter the sliced tomatoes, onions, and minced garlic over and around the fish. This will help infuse flavor into the fish as it bakes.
5. Bake the Fish
• Cover the baking dish with aluminum foil and bake in the preheated oven for about 15-20 minutes. Then, remove the foil and bake for an additional 5-10 minutes, or until the fish is cooked through and slightly golden on top.
6. Garnish and Serve
• Once done, remove the fish from the oven. Garnish with freshly chopped parsley or cilantro for an extra burst of freshness.
7. Serve
• Serve the baked bangus hot with steamed rice and a side of vegetables.
